I actually cooked some tacos once that were maybe the greatest tacos of all time. I may have another crack at them..

Paste is a go, sauce is a no go, imo. But chili is so versatile do it how you like it.

Oven is heating up now for the first loaf of sourdough. I don't want to try bagels again until I get some better quality ingredients in.

3:2 ratio of flour to water by volume.
I'm using a 2:1 ratio of all purpose to wheat for the flour

The crust was well done but inside was soft and chewy. I'll try again tomorrow. We took the day off to go fishing. So I'll bake some bread after.
